My Pistachio Chicken Mole Poblano

I’ve been working on this one for years. As a chef, I can tell you it’s actually a hard one. Mole is a delicious savory, chocolatey & nutty traditional Mexican chicken dish. This was my grandma’s favorite thing to make— every Sunday night, she hosted a dinner party & would make chicken mole and napoles for all of her friends.(this is what I will to doing as a cute little old lady) . I love making mole sauce because it reminds me how abuelita and I are so similar!

heads up: it is about 27 ingredients so I would make a day of it. You’re not gonna find a mole recipe that is less than 20 ingredients sorry!!
